After undergoing a wild fermentation and partial malolactic fermentation (for added creaminess) this wine has seen just a hint of oak (10%).  Citrus, apple, and stone fruits are accompanied by a hint of vanilla bean to create an enticing, aromatic nose. On the palate, flavors of yellow apple and pear, with a dash of orange zest, are backed by a subtle toasty quality. The rich, creamy mouthfeel and well-integrated acidity bring the flavors through to a long, smooth finish.

I put this on our holiday offering mainly as I believe a nice Chardonnay is relatively versatile for pairing....always great to have a few bottles on hand.  This particular bottle is complex, yet very well balanced.  Broadside sourced the grapes from vineyards in the Paso Robles Highlands and Edna Valley located in the Central Coast AVA of California.  After undergoing a wild fermentation (meaning no outside yeast was added to the process....just what naturally occurs in the vineyard and winery), this wine went through partial malolactic fermentation, where the malic acid of the grapes undergoes a transformation to lactic acid, giving the wine a rich creaminess.  By not having all the wine go through this process, the remaining malic acid adds to the great acid structure that this wine presents.   The result is a medium-bodied creamy, fresh Chardonnay with hints of nuttiness and slightly bruised apple.   Don't be worried by the age of this wine (2016).  I opened up a bottle to enjoy just this week, and found it still fresh and lovely.
