Being the maker of the King’s mead is a great honour – but the problem is, this King is very hard to please.
Herbs are a key to the success of this recipe. Fennel, thyme and sage give it a distinct flavour – but the King likes his mead sweet and strong. Honey fresh from the comb, and a fortified wine from the Iberian peninsula are the secret ingredients – and also my bargaining chip should his majesty be in the mood for a beheading.
