The Coffey Still is the world’s first patented continuous still invented by Mr. Aeneas Coffey in 1830. Masataka Taketsuru valued the feature of this type of still, which retains the flavors of ingredients and also creates a distinctive texture.
Nose: Big, bold and really rich. Shelves of old leather books, pickled apricots, dusty oak floors. Deep dark spices of ginger and plums, Parkin cake. Also some Mandarin juice citrus ripples.
Palate: Sweetness up front, then the spices start to build. Tiramisu, chocolate, coffee grinds and rice clotted cream. Then Maraschino cherries in sherry.
Finish: Rich and decadent with chocolate covered toffee pennies. Seriously lengthy.
